Mango Basil Pesto Chicken – Recipe

Prep time: 30-45 minutes

Number of Ingredients: 7

Suggested sides: Low heat Zucchini and Squash, Basmati Rice, and a fresh salad.

Ingredients:

  • 1-2 lbs Chicken breast tenderloins
  • 1 cup (heaping) Fresh Basil
  • ½ Mango
  • Olive Oil
  • Himalayan Pink Salt
  • Pepper
  • Lemons

Directions:

Mango Basil Pesto

  1. Finely chop the freshly picked and washed basil and place into a bowl.
  2. Peel a mango and use about ½ a mango and cut to small pieces and add to bowl.
  3. Add ¼ cup of olive oil into bowl and mix
  4. Allow to set while preparing the other ingredients of this recipe.

*This will allow the healthy phytochemicals to be released from the basil

Chicken

  1. Wash the chicken breast and set aside
  2. Drizzle enough olive oil to cover the chicken to provide a light coating
  3. Add 3-5 turns of salt and pepper to desired taste
  4. Place chicken on grill that has reached a temperature of 350 degrees
  5. While chicken is on the grill cut whole lemons into quarters
  6. Just prior to chicken being complete place whole lemons on the grill to allow them to heat
  7. Remove chicken and place into a container
  8. Apply the Mango Basil Pesto to the chicken
  9. Remove lemons from the grill and add to container with chicken
  10. Plate your chicken with your favorite sides and don’t forget to squeeze the grilled lemons over your chicken
